8 pineapple slices
4 tbsp butter
4 tbsp brown sugar
3/4 cup pineapple juice
1 tsp coffee (ground)
1/2 cup rum
1/2 cup almonds, grated and roasted
1. Heat butter in pan and saute pineapple on both sides slightly.
2. Add juice, sugar and coffee let simmer for a minute until slightly thickened.
3. Remove from heat, add rum, return to heat and flambe.
4. Place on dish and garnish with roasted almonds.
